Ingredients
- 1 crusty bread;
- 2 red bell pepper, sliced into strips;
- 1 onion;
- 2 garlic cloves, minced or thinly sliced
- A handful of cherry tomatoes (or a small tomato, diced)
- Mozzarella to put pieces between the bread
- Grated Parmesan cheese
- Fresh rosemary or thyme (optional)
- Olive oil
- Salt & pepper
Instructions
- Set to 180°C
- Cut the bread into pieces and put some mozzarella between them, then drizzle some olive oil on top.
- Let the vegetables soften gently in a pan.
- Put the vegetables in a blender and make a sauce.
- Spread the sauce over the bread.
- Sprinkle some mozzarella cheese on top.
- Finish with the mozzarella ball, cut slightly open.
- Add a little more olive oil, then put it in the oven.
Serve warm
