Pepper Bread

A warm, melty bread dish with sweet red pepper, garlic, onion, and a touch of tomato—topped with gooey cheese and served straight from the oven. Comfort food made simple.

Ingredients

  • 1 crusty bread;
  • 2 red bell pepper, sliced into strips;
  • 1 onion;
  • 2 garlic cloves, minced or thinly sliced
  • A handful of cherry tomatoes (or a small tomato, diced)
  • Mozzarella to put pieces between the bread
  • Grated Parmesan cheese
  • Fresh rosemary or thyme (optional)
  • Olive oil
  • Salt & pepper

Instructions

  1. Set to 180°C
  2. Cut the bread into pieces and put some mozzarella between them, then drizzle some olive oil on top.
  3. Let the vegetables soften gently in a pan.
  4. Put the vegetables in a blender and make a sauce.
  5. Spread the sauce over the bread.
  6. Sprinkle some mozzarella cheese on top.
  7. Finish with the mozzarella ball, cut slightly open.
  8. Add a little more olive oil, then put it in the oven.

Serve warm
Great as a snack, appetizer, or part of a shared table.
