Cauliflower isn’t everyone’s favorite vegetable, but this simple and flavorful recipe might just change your mind and the way you see cauliflower forever.
Start by slicing the cauliflower into thick rounds and placing them in a baking dish lightly greased with olive oil. Then, whip up a quick homemade pesto using two handfuls of fresh basil, two cloves of garlic, olive oil, Parmesan cheese, and optionally pine nuts or a bit of arugula for a peppery kick.
Spread the pesto generously over the cauliflower and bake at 180°C (350°F) for about 8 minutes. When they’re tender, take the dish out of the oven, add halved cherry tomatoes and torn mozzarella on top, and pop it back in until the cheese is beautifully melted.
Once the mozzarella is nice and gooey, take it out and serve immediately. It’s a colorful, cheesy, and fresh way to rediscover cauliflower. Perfect as a light main or a standout side.
